Veggie Omelet
INGREDIENTS
2 large eggs
½ green pepper
½ medium onion
½ c spinach
½ tomato
2 c bok choy, chopped
INSTRUCTIONS
1. Sautѐ veggies, remove from pan.
2. Whip eggs with fork and pour over veggies.
3. Let cook for a few minutes until eggs are no longer runny. Serve warm.
