Sweet Potato Hash
INGREDIENTS:
4 small sweet potatoes
2 small onions
2 Tbsp olive oil
1 tsp cayenne pepper
2 bell peppers
1 cup grape tomatoes
4 Tbsp cilantro
4 eggs
INSTRUCTIONS:
Remove skin from potatoes and cut into cubes. Chop onions into small pieces.
Remove stalk, seeds, and white membrane from peppers. Cut peppers into small pieces. Cut grape tomatoes in half. Chop cilantro into very small pieces.
In a large pan over medium heat, combine the potatoes and onions with the oil and cayenne pepper. Cook covered with lid for about 5 minutes or until softened.
Remove lid and cook for another 2 minutes until browned.
Add the peppers, tomatoes, and cilantro, cooking for another 3 minutes, tossing everything together.
Spread hash mixture throughout the pan evenly. Make an impression with a spoon in 4 different places on the hash.
Crack the eggs into each of the impressions. Cook for 3 more minutes, covered with a lid until the white part of the egg is set.
Divide the hash up around the eggs into 4 equal parts. Enjoy!
