Sloppy Joes


INGREDIENTS:

  • 1 cup quinoa

  • ¾ cup ketchup

  • 3 Tbsp reduced sodium soy sauce

  • 1 small onion

  • 2 Tbsp oil

  • ½ tsp onion powder

  • 2 garlic cloves (minced)

  • 1 tsp white vinegar

  • 8 slices whole wheat bread or buns

INSTRUCTIONS:

  1. In a large saucepan, bring 2 cups of water and 1 cup of quinoa to a boil then reduce to medium heat to cook for an additional 15 minutes.

  2. Dice onion into small pieces and mince garlic.

  3. Heat oil in a skillet over medium-high heat. Add in onions and heat until they are soft.

  4. Add in remaining ingredients to onions, including quinoa. Mix well and until heated.

  5. Serve on 2 slices of bread or bun.
