Sloppy Joes
INGREDIENTS:
1 cup quinoa
¾ cup ketchup
3 Tbsp reduced sodium soy sauce
1 small onion
2 Tbsp oil
½ tsp onion powder
2 garlic cloves (minced)
1 tsp white vinegar
8 slices whole wheat bread or buns
INSTRUCTIONS:
In a large saucepan, bring 2 cups of water and 1 cup of quinoa to a boil then reduce to medium heat to cook for an additional 15 minutes.
Dice onion into small pieces and mince garlic.
Heat oil in a skillet over medium-high heat. Add in onions and heat until they are soft.
Add in remaining ingredients to onions, including quinoa. Mix well and until heated.
Serve on 2 slices of bread or bun.
