Applesauce Pancakes


INGREDIENTS:

  • 1 cup white or whole-wheat flour

  • ¾ Tbsp baking powder

  • ¼ tsp salt

  • 1 large egg

  • ½ cup low-fat milk

  • 1 cup unsweetened applesauce

  • ¾ cup lite or regular maple syrup

  • ½ Tbsp vanilla extract

INSTRUCTIONS:

  1. In a large bowl, mix together the flour, baking powder, and salt.

  2. In a medium bowl, lightly beat the egg. Add in milk, applesauce, ⅛ cup of maple syrup, cinnamon,and vanilla. Mix well.

  3. Pour the liquid mixture into the flour mixture and gently mix until just combined. The batter should remain lumpy.

  4. Preheat large skillet over medium heat (about 3 minutes). Spray with nonstick cooking spray.

  5. Pour ¼ cup amounts of batter onto skillet, making sure each amount doesn’t touch each other. Cook about 2 minutes on each side of pancake, or until golden brown.

  6. Individually pour leftover amount of syrup on pancakes. Enjoy!
