Rosemary Veggie Oatmeal


INGREDIENTS:

  • 2 cups rolled oats

  • 2 cups low-fat milk (Substitute for vegan)

  • 1 tbsp oil

  • 1 medium white onion

  • 2 cups mushrooms

  • 2 cup collard greens

  • 1 cup grape tomatoes

  • 2 Tbsp. fresh rosemary

INSTRUCTIONS:

  1. Chop onion and mushrooms into small pieces.Chop grape tomatoes in half.

  2. In a large pot, add oats, 2 cups of water, and milk. Place on medium heat and bring to a boil, stirring occasionally. After coming to a boil, lower temperature to low-medium. Stir every minute so they do not burn to the bottom of the pan.

  3. In a medium pan, heat oil over medium heat. Add onion and cook until they start to become clear and tender. Add in the mushrooms and greens and cook until mushrooms are soft and the greens are wilted.

  4. Add in tomato and rosemary to the vegetable mixture and cook for 3 minutes, stirring occasionally.

  5. Put the vegetable mixture into the oatmeal mixture, and stir until well mixed. Serve warm and enjoy!
