Spinach, Leek, and White Bean Soup
INGREDIENTS:
1 tsp olive oil
1 leek, bulb only
1 clove garlic
16 oz can fat-free chicken broth
15oz cannellini beans
1 bay leaf
1 tsp ground cumin
¼ cup orzo
1 cup fresh spinach
INSTRUCTIONS:
Heat olive oil in a large saucepan or soup pot over medium heat
Chop garlic and leek. Add into saucepan and cook until tender, stirring often (about 5 minutes).
Stir in chicken broth, beans, bay leaf, and cumin. Bring to a boil, then turn down to low heat and stir in couscous.
Cover and let cook for 5 minutes, or until orzo is soft. Stir in spinach and season with pepper if desired (1-2 minutes). Serve Immediately.
