Spinach, Leek, and White Bean Soup


INGREDIENTS:

  • 1 tsp olive oil

  • 1 leek, bulb only

  • 1 clove garlic

  • 16 oz can fat-free chicken broth

  • 15oz cannellini beans

  • 1 bay leaf

  • 1 tsp ground cumin

  • ¼ cup orzo

  • 1 cup fresh spinach

INSTRUCTIONS:

  1. Heat olive oil in a large saucepan or soup pot over medium heat

  2. Chop garlic and leek. Add into saucepan and cook until tender, stirring often (about 5 minutes).

  3. Stir in chicken broth, beans, bay leaf, and cumin. Bring to a boil, then turn down to low heat and stir in couscous.

  4. Cover and let cook for 5 minutes, or until orzo is soft. Stir in spinach and season with pepper if desired (1-2 minutes). Serve Immediately.
