Cheesy Beans and Rice


INGREDIENTS:

  • 1 cup minute rice

  • 1 can kidney beans

  • 1 cup of canned corn

  • 1.5 cups canned diced tomatoes

  • 1 medium onion (chopped)

  • 2 tsp garlic, minced

  • 1 cup shredded cheese

  • 1 Tbsp oil

INSTRUCTIONS:

  1. Cook rice according to directions in large microwave safe bowl.

  2. Place chopped onions in bowl of water.

  3. Mix beans (with juice from the can), diced tomatoes (with juice from can, garlic, and oil in with the rice. Microwave at 50% power for 5 minutes.

  4. Drain the chopped onions and mix into the bowl with the rice and bean mixture. Add the shredded cheese as well. Stir and microwave on 70% power for 5 minutes. Enjoy
