Cream of Celery Soup
INGREDIENTS
4 stalks celery, chopped
1 onion, chopped
1 ½ c cooked spinach
2 c low sodium chicken broth
2 c low fat milk
INSTRUCTIONS
1.In a large saucepan, add celery onion, spinach, and chicken broth.
2.Cook on medium high heat and bring to a boil.
3.Reduce heat to low and add milk. Let cook for 10 minutes or until vegetables are tender.
4. Refrigerate leftovers.
*May add salt and pepper to taste and 1 spoonful of sour cream to each bowl
