Lemon Asparagus Pasta


INGREDIENTS:

  • 8oz penne pasta

  • 1/2 pound fresh asparagus

  • 1 large lemon

  • ¾ cup grated parmesan cheese

  • ¼ cup olive oil

  • ¼ tsp dried thyme

INSTRUCTIONS:

1. Add penne pasta to large microwave safe bowl. Add water so that pasta is covered by a few inches. Cover with plate and microwave for about 3 minutes past the time listed on the box for boiling.

2. Trim asparagus ends and cut into medium size pieces.

3. Stir asparagus into the pan and microwave for 2 minutes or until asparagus is bright green. Drain water from pasta and asparagus.

4. Place penne and asparagus in large bowl. Slice lemon in half. Squeeze lemon juice over pasta. Add Parmesan cheese, olive oil, and thyme until thoroughly combined. Enjoy!
