Warm Kale and Potato Salad
INGREDIENTS
1 Tbsp vegetable oil
1 c onion, chopped
3 garlic cloves, minced
3 potatoes, sliced
1 bunch kale (about 1 pound) trimmed from stems and chopped
1 c low sodium chicken broth
1 Tbsp lemon juice
INSTRUCTIONS
1.In a large pot, heat vegetable oil over medium heat
2.Add the onions and garlic, cook until soft
3.Add potatoes, kale, and broth. Cover pot and cook for about 15 minutes or until potatoes are soft
4.Add lemon juice
5.Refrigerate leftovers
*May add salt and pepper to taste
