Potato Corn Soup
INGREDIENTS
1 Tbsp oil
1 c onions, chopped
3 c diced potatoes
2 c low sodium broth
1 c low fat milk
1 ½ c corn
INSTRUCTIONS 1. In a large pot, heat oil over medium heat. Add onions and cook until soft. Add potatoes, broth, and 1 cup water.
2. Bring to a boil. Lower heat and simmer for 30 minutes.
3. Stir until smooth. Use the back of a spoon or a fork to mash some of the potatoes.Add milk and corn.
4. Reheat for 10 minutes. Serve hot and enjoy! Add salt and pepper to taste
