Spanish Tortilla with Kohlrabi, Leek, and Chard
INGREDIENTS
8 medium yellow potatoes
7 eggs
5 leeks, white parts only
4 small kohlrabi bulbs
1 bunch swiss chard
1 tsp salt
2 tsp pepper
3 Tbsp olive oil
INSTRUCTIONS
1. Preheat oven to 350°F.
2. Slice potatoes into thin discs, and chop leeks, kohlrabi bulbs, and swiss chard (leaves and stems) into small chunks.
3. Heat 2 Tbsp oil in deep pan, add veggies, salt, and pepper, and sauté covered, until soft, 20 minutes.
4. Beat eggs. Add eggs to pan of veggies.
5. Add remaining 1 Tbsp oil to separate, deep oven-proof pan and pour in egg mixture.
6. Bake in oven with lid on for 30 min.
7. Remove from pan and serve.
