Leek, Potato, & Pepper Hash with Soft Boiled Egg
INGREDIENTS
8 medium yellow potatoes
3 large leeks
7 hot peppers
3 Tbsp unsalted butter
1 tsp salt
2 tsp pepper
4 eggs
INSTRUCTIONS
1. Chop potatoes into ½ in. cubes. Slice leeks lengthwise and rinse between leaves thoroughly. Then chop crosswise. Chop peppers finely.
2. Melt 2 ½ Tbsp butter in saucepan over medium heat.
3. One butter is hot, add leeks and cook 1-2 min. Add potatoes, peppers, salt and pepper and stir to coat with butter.
4. Cover with lid and cook about 10-15 min. or until potatoes are soft.
5. For eggs, bring water in saucepan to a boil, reduce to a simmer, and add eggs carefully. Boil for 5 min. then drain and rinse under cold water. Peel eggs carefully.
6. Serve hash with eggs split open on top.
