Roasted Beet Salad


INGREDIENTS

4 beets, green removed

2 Tbsp mustard

1Tbsp vinegar

2 tsp vegetable oil

1 tsp sugar

4 c lettuce

INSTRUCTIONS

1. Preheat oven to 400⁰F.

2. Place beets on large square of foil. Close up foil tightly. Place on baking sheet.

3. Roast beets for one hour or until beets are tender. Let cool slightly and remove beets from foil.

4. Rub off beet skins with a paper towel. (Be careful when removing skin, the juice can stain. Use salt to remove juice stains from hands).

5. Slice the beets

6. In large bowl, mix together mustard, vinegar, oil, and sugar

7. Add beets to bowl, stir gently.

8. Serve over lettuce
