Spicy Pumpkin Soup
INGREDIENTS
3 lbs pumpkin
1 onion
1 sweet potato
2 carrots
1 leek
1.5 quarts vegetable stock
1 tbsp. oil
1 hot pepper
INSTRUCTIONS 1. Peel and chop vegetables into bite size pieces.
2. Warm oil in pot, and sauté leek, onion, and hot pepper for about 2 to 3 minutes.
3. Add other vegetables and sauté for another minute.
4. Add stock and bring to a boil. Reduce heat and let simmer for 40 to 45 minutes.
5. Let cool, then blend in a blender until smooth.
